This recipe for vegetable-fried rice will allow you to recreate the Chinese takeout dish in your home. This recipe is a winner with eggs, carrots and edamame. It also includes brown rice, soy sauce, and brown edamame.

Even someone who earns a living by cooking meals, like myself, is tempted to order takeout. It's easy and tastes good (usually). It's obvious that it is convenient (you know, I can read a book while dinner appears MAGICALLY at my front door ??!?!)). The taste is a result of a variety of factors. First, you need experienced cooks. Even teenagers at Domino's who make pizza have made more in a single week than I'll ever make in my life. It's also because the health of the pizza is not as important as its flavor.
When ordering Chinese food, I am always drawn to the vegetable fried risotto. I could eat a whole carton of fried rice by myself. It was obvious that I needed to find a way to make the same thing at home, but also as close as possible to my order. This recipe is as close as I can get to takeout. You can control the ingredients in any recipe that you prepare at home. You don't like carrots? You can leave them out. Sodium a concern? Reduce the amount of soy or switch to something else.

Is Vegetable Fried Rice Healthy?
Vegetable fried rice can be a healthy option for both vegetarians and non-vegetarians. The vegetables add fiber, vitamins K and minerals, while the eggs provide protein. Brown rice, on the other hand, is more nutritious than white rice. If you have high blood pressure then the only thing to worry about is the sodium in the soya sauce.
Ingredients
As you can see, I've divided it into two sections. Olive oil is a healthier alternative to vegetable oil. You can use whatever you like.
The rice:
- 2 eggs lightly beaten
- Make 1 1/2 cups cooked rice the day before
- 2 tbsp of vegetable oil
- 2 cloves of garlic, chopped
- 1/2 carrot, diced
- Half cup of corn
- 1/2 cup frozen edamame
- Green onions thinly sliced, 1 tbsp
The SAUCE:
- 1 tbsp soy sauce
- Fresh black pepper pinch
Instrucciones
Use a ratio of 1:1 rice to water the day before you plan on eating it. In a rice cooker, combine water and rice. Transfer the rice into a bowl, let it cool before placing it overnight in the refrigerator.
Scramble
Heat a large pan on MEDIUM to HIGH heat. Add the oil. Pour in the eggs, stir and cook until scrambled. Transfer the mixture to a dish and set it aside.
Saute
Add the carrots to the same pan and cook until they are soft. Stir in the remaining vegetables and cook until they are hot.
Add
Stir fry the vegetables for 2 minutes, then add the rice. Add the black pepper and soy sauce.
Combine
Add the eggs to the pan and mix well. Transfer the rice and vegetables to plates, garnished with lime wedges.
DEVOUR!
Variations
- This recipe is flexible. You can change the vegetables or add new ones to it. Beans or broccoli are great vegetables to stir fry because they stay crispy after being stir-fried.
- Tofu is a great alternative to eggs.
- If you find soy to be too salty, try tamari or a version with less sodium. For more flavor, you can add ginger or chili flakes.
- This recipe is called "vegetable rice", but I will not report you to the Rice Police if you use another grain. You can use quinoa or bulgur as you wish.

Rinse the pasta first to remove any starch. If you have the time, soak for 30 minutes. This will improve its texture. Use a 1:1 ratio (1 cup water for 1 cup rice). You may need more water depending on the type and size of rice.
If you only have fresh cooked rice, spread it out on a tray. Allow it to cool for a couple of minutes or place it in the refrigerator for up to an hour. You can immediately use the rice after it has dried up.
Use other Asian sauces such as hoisin or oyster sauce. Remember that the fried-rice taste will change.
How to store Vegetable Fried rice
Let the rice cool down completely. Store it in a container that is airtight in the refrigerator for up to four days. I'd eat the rice before the third day. You can reheat in a skillet/wok or microwave. To prevent the food from drying out, sprinkle some water on it and cover it with a moist cloth. Add a little oil to a skillet if you are using one. You can freeze it up to three months. Let it thaw in the refrigerator overnight before reheating.
Vegetable Fried Rice Recipe
Ingredients
The Rice:
- 2 eggs lightly beaten
- 1 1/2 cup rice cooked
- 2 tbsp vegetable oil
- 2 garlic cloves chopped
- 1/2 carrot diced
- 1/2 cup corn
- 1/2 cup frozen edamame
- 1 tbsp green onions thinly sliced
The Sauce
- 1 tbsp soy sauce
- pinch of fresh black pepper

Basil is an herb that originated in tropical regions of India, Africa, China, Indonesia, Malaysia, Thailand, Philippines, Mexico, Puerto Rico, Jamaica, Costa Rica, Panama, Colombia, Venezuela, Brazil, Peru, Ecuador, Bolivia, Paraguay, Uruguay, Argentina, and Chile.
The plant is easy to grow in most climates and requires little maintenance. Basil also thrives in poor soil conditions and is very drought tolerant.
As for the health benefits, more than 200 known compounds are found in basil, including flavonoids, phenolic acids, lignans, polysaccharides, essential oils, vitamins, and minerals.
According to the University of Maryland Medical Center, basil contains powerful anti-inflammatory properties which may help relieve symptoms associated with arthritis, asthma, allergies, bronchitis, cancer, cardiovascular disease, diabetes, digestive disorders, depression, eczema, insomnia, infections, migraines, osteoporosis, psoriasis, respiratory problems, stress, and ulcers.
Basil is also a culinary spice and is often added to tomato sauces, soups, salads, pasta dishes, rice dishes, dips, casseroles, pizza toppings, pesto, chicken wings, and popcorn.
However, like all herbs, basil should be consumed in moderation. Too much of anything is not good for you. For example, eating large amounts of basil could lead to stomach upset. And if you have sensitive tummies, avoid consuming basil during pregnancy.
